Açaí Smoothie Parfaits

When the weather heats up, we make smoothies! Here's a recipe for açaí smoothie parfaits with raspberry overnight oats and topped with Elemental Superfood Cranberry Almond + Lucuma Crumble. Perfect combo, easy to make and delicious! Just make sure to plan ahead for the overnight oats.


Açaí Smoothie Parfaits

Raspberry Overnight Oats

  • 1/2 cup gluten-free oats

  • 1 tbsp flax meal⠀
  • 1 tbsp chia seeds⠀
  • pinch of Himalayan salt
  • 3/4 cup almond milk

  • 1/4 cup raspberries, mashed (fresh or thawed frozen)⠀
  • 1 tbsp raw honey⠀
  • 1/4 tsp pure vanilla extract

Combine the dry ingredients in a pint jar. Add the wet ingredients starting with the coconut milk. Seal the lid, give everything a good shake and leave in the fridge overnight or for at least 6 hours.⠀

Açaí Smoothie⠀

  • Sambazon açaí Pure Unsweetened packs⠀
  • 1/2 frozen banana⠀
  • 1/4 cup frozen raspberries⠀
  • 1/4 cup frozen blueberries⠀
  • 2/3 cup almond milk⠀
  • 3 tbsp flax meal

Blend until smooth. Eat alone or serve with overnights oats for an antioxidant-packed breakfast parfait. If you're feeling fancy, top with berries, shredded coconut and Elemental Superfood crumble.
