Gluten-Free Apple Cake
Ingredients
- 2 ½ cups brown rice flour (can combine w/ almond meal or cornmeal)⠀
- 1 tsp baking soda⠀
- ¼ tsp baking powder⠀
- 1 ½ tsp salt⠀
- 1 ½ tsp cinnamon⠀
- ½ tsp ground cloves⠀
- ½ tsp ground nutmeg⠀
- 1 tbsp freshly grated ginger⠀
- ½ cup coconut oil, melted⠀
- ½ cup coconut milk (or water)⠀
- 2 eggs⠀
- 1 ½ cups unsweetened applesauce⠀
- 1-2 apples, thinly sliced (for topping)⠀
Instructions
Preheat the oven to 350°F, lightly coat a 9”-round springform pan or cake pan with oil, then dust with flour⠀
Whisk together the flour, dry spices, baking powder, baking soda, and salt.⠀
In a separate bowl, whisk together the coconut oil, coconut milk, eggs, and fresh ginger. Slowly add in the dry mixture.⠀
Add the applesauce and stir until just combined⠀
Pour into the greased and floured pan. Arrange the apple slices in a circular pattern.⠀
Bake at 350°F for 50 minutes, or until a toothpick inserted is clean.⠀
Remove from oven, wait 5 minutes then remove from pan ⠀
Notes: For a sweeter cake, you can also add 1/4 cup honey, agave or maple syrup with 1/4 less coconut milk/ water⠀
