If you need a little pick me up, these delicate and tart Lemon Lavender Coconut Macadamia Pudding cups are a delightfully refreshing and light dessert or mid-day snack. With just a little honey, this recipe is not too sweet and perfectly lemony! There is no need to soak the macadamia nuts overnight, so you can dig in the same day.
Lemon Lavender Coconut Macadamia Pudding
- ¾ c macadamia nuts
- 3 cups Thai coconut meat (about 4 young coconuts)
- 2 tbsp raw honey
- 1 ¼ cup almond milk (or milk of choice)
- ½ tsp pearl powder
- 1 tsp dried lavender
- zest of 1 lemon
- juice of 2 lemons
- Topping: Elemental Superfood Crumble
Blend all the ingredients on high in a Vitamix or high powered blender. Chill in the fridge for a few hours before serving. We like this with just a hint of sweetness, but you can add more honey if you like. Want a little crunch? Top with Elemental Superfood Crumble!
